Banana Oatmeal Pancake Recipe

Ingredients

  • 2 eggs
  • 6 tbsp egg whites
  • 3 bananas
  • 2 tbsp ground flax seeds (optional)
  • 1 tbsp baking soda
  • 1 1/3 cup of reduced sugar instant oats (I use the quaker brand)
  • 2/3 cups of unsweetened oats
  • coconut oil
  • a pinch of salt

Instructions

  1. Combine all ingredients in the blender (putting the liquids at the bottom if your blender is not very strong).

  2. Blend until smooth

  3. Measure 1/8th of a tablespoon of coconut oil into a nonstick pan and pour about a quarter cup of the mix into the pan once the oil is hot

  4. Turn the heat to low-medium and cook for about 2 minutes, flip and cook the other side for about 2 minutes until pancake is cooked through.

  5. Enjoy! You can pair your banana oatmeal pancakes with milk, coffee, or whatever beverage you like, but I recommend green tea if you want to lose weight or simply become healthier.

This recipe is sweet enough without any added sugar or syrup but feel free to adjust it to suit your personal taste and preferences!

Also, consider making the pancakes in a toaster if you don’t like frying or are looking for a new way to enjoy pancakes.
