1. Zipper bags
Make a huge batch on Monday night. Then split the rest into little zipper bags that you can take to work for lunch.
I find that I have fewer excuses to skip the salad when it’s right there already pre-portioned.
2. Boiled eggs
Boil 6 or 7 eggs at once and save them in the fridge.
That way, you have a wholesome source of protein to top your salad with instantly.
3. Add Meat
If you really want to take this salad to the next level, add some meat.
I love a good grilled chicken breast in my salad.
It just makes me feel like i’ve reached boss status with my fitness level.
I mean, which other mere mortal adds chicken breast to their salad? That’s right, only the bosses do that 😀

Ingredients
- Boiled Eggs
- Lettuce
- Cucumber
- Tomatoes
- Grilled Chicken (optional)
- Canned Sweet Corn (optional)
- Salad Dressing (optional)
Method
- Chop and toss together the lettuce, cucumber, tomatoes, sweet corn, sliced boiled eggs, and grilled chicken.
- Top with some salad dressing and enjoy!
