Anyway, I stumbled on these sandwiches on a whim and they’re becoming a fast favorite.

It’s basically tomato + avocado.
Healthy Notes on this Tomavocado Chicken Sandwich
These sandwiches are surprisingly balanced.
You get good fats from the avocado. Healthy carbs from the bread. Awesome protein from the chicken breast.
It’s the kind of breakfast (or lunch) you can eat and feel good about!
Tomavocado Chicken Sandwich Recipe
Fancy looking but easy to make tomato avocado chicken sandwich recipe
- 1/2 Avocado
- 2 slices Whole grain bread
- 1/4 cup Tomatoes
- Handful Fresh spinach (about 5 leaves) optional
- 1/2 cup Chopped chicken breast
- Salt to taste
- Pepper to taste
Chop and stir fry chicken breast, adding a little salt and pepper to taste (the smaller the pieces, the better). Dice the tomatoes into small pieces. Chop the spinach
Mash the avocado in a bowl, add a pinch of salt & stir well until you have a smooth paste. Spread half the mix onto one slice of bread. Layer half the chicken chunks over the avocado; followed by half the tomatoes. Garnish with some of the chopped spinach
Repeat with second slice of bread using the remaining avocado, tomatoes, chicken, and chopped spinach.
To make this even faster, prep some chicken breast over the weekend by chopping and marinating in your favorite spices. That way, whenever you want to make this sandwich (or any other recipe) you always have chicken chunks ready to go and you don't have to do any prep work at all!
