This healthy beans recipe is so beautiful.
I stumbled upon it while researching how to make the healthiest (and most delicious) Nigerian cookies on earth!
While these cookies haven’t quite reached my criteria for what I would consider to be my absolute BEST Nigerian cookies, they are really good.
Also, my husband (who has such a sweet tooth) really liked them and almost ate them all before I could take any pictures!
I literally had to chase him out of the kitchen so I could take pictures to share with you!
The main thing I love about this healthy beans recipe is that it is rich in fiber.
This means that these cookies are GREAT for digestive health, they support clearer skin, and they won’t send you on a sugar high like normal, store-bought cookies.
Speaking of sugar, these cookies are 100% sugar free even though they taste really sweet.
Instead of sugar, this healthy beans recipe relies on a small amount of raw, unprocessed honey.
In the ideal world, these cookies will have neither sugar nor honey but come on. These are cookies after all 🙂
Side Note
One thing I don’t like about these cookies it that I know that they are made of beans!

I don’t know what to say.
I just had a lot of cognitive dissonance about it.
In my mind, cookies are made of flour – not beans.
So even though these cookies were downright delicious and healthy, I didn’t eat very many of them.
Not eating many turned out to be a good thing in the end anyway, because I was able to send my husband to work with a healthy cookie the next day. Win!
I’m always happy when I know he has something healthy to snack on at work.
